A Seasonal Feast this Winter at Holden Manz Estate

The Franschhoek Kitchen restaurant situated on the Holden Manz Wine Estate, recently launched their new Winter Menu and guests to this prestigious restaurant are in for a real ‘seasonal feast’ this Winter!

Executive Chef, Ricardo Le Roux, is an artist in every sense of the word and when asked what the inspiration is for his recipes and culinary approach he replies with a smile saying that ‘I don’t know, my head is a weird and wonderful place, I get inspired by music, by people, by landscapes - I don’t get inspired by other recipes or chef’s but people in general, how they dress and react inspires my culinary approach.'

Chef Ricardo had this to say about his brand new Winter Menu: 'Seasonality is a word so often used that we tend to forget what it really means. 

If we study nature and seasonally available ingredients, we can clearly see what mother nature wants us to eat. It then becomes clear that as chefs, we are guarded with the task of listening and interpreting that valuable information and to echo it on our plates. Mother nature slows down, we slow down. Mother nature shows off her soft side, we turn to soft, cosy & warming flavours. 
 
Warming flavours such as cinnamon, cloves, cardamom, ginger & orange immediately jump to mind and can be experienced in our 6 hour braised torchon of beef cheek with hearty samp and white bean cassoulet, slow cooked oxtail bitterballen & spiced jus. The staple of South African cooking, butternut soup is re-interpreted as textures of pumpkin boasting roasted butternut cheesecake croquettes, warming cumin cream cheese, poached garlic oil, crispy pumpkin & curried butternut bisque. 

Dessert highlights include a whole Dalewood camembert wrapped in cumin phyllo pastry and baked as well as a decadent quince & hazelnut malva pudding with Frangelico anglaise, port linzer cake ice cream & hazelnut patisserie. In winter we take things slow, with wonderful results.’
